CHIA PUDDING
(DF, GF)

You will need a glass jar with a lid. I have used a mason jar (it used to have jam in it!) as this is the perfect size for me. You might like to try a larger one and then serve up multiple portions into small bowls.
INGREDIENTS

3 x tablespoon organic chia seeds

200g organic coconut cream or milk (or you can used almond milk if you prefer)

1 teaspoon cinnamon

1/4 cup frozen organic raspberries

sprig of mint
-
splash (1 teaspoon max!) of maple syrup optional

variations: cacao or lemon or vanilla - but substituting the spices you can keep change the flavour easily
METHOD

Pour the coconut cream / milk into the jar

Add the chia seeds & cinnamon

Pop on the lid & shake

Place in refrigerator overnight

Remove the lid & add frozen (or fresh organic) berries and a sprig of mint. For additional sweetness, a small splash of maple syrup can be added
