COCONUT LEMON MACADAMIA RAW SLICE

(DF, GF)

  • You will need a high speed blender or Thermomix for this recipe.

  • You will also need a container of about 20cm x 20cm (doesn't have to be square) lined with non-bleached baking paper. 

 

  • Tip: To make it easier to line the container, scrunch up the paper and then smother it out into the container you're using. Make sure the baking paper is bigger than the container.

BASE

  • 1/4 teaspoon of beetroot powder (optional)

  • 12 medjool dates - sometimes I pre-soak them for 20mins - don't forget to pit them! 

  • 2 1/2 cups desiccated coconut  - make sure this is organic with no added sugar

  • 1 tablespoon nut butter - almond works well for this recipe but ABC or others are OK too

  • 1 tablespoon coconut cream

  • 1 teaspoon vanilla extract - I use organic paste 

  • pinch of salt

TOPPING

2 cups macadamias - organic if you can

1/3 cup organic maple syrup

zest 1 x lemon

juice 1 x  lemon

3 tablespoons organic unrefined coconut oil

1 teaspoon vanilla paste or organic essence

1/4 teaspoon organic beetroot powder for sprinkling (optional) 

METHOD

  1. Place the BASE ingredients into your processor and blend until the mixture resembles a fine, sticky crumb.

  2. Press the mixture firmly into the base of your prepared container.

  3. Using the back of a spoon, apply some pressure across the base to smooth it out and make it even.

  4. For the TOPPING, Place the macadamias into your processor and blend until they form a smooth paste. 

  5. Then ddd in the remaining ingredients and blend until the mixture is smooth.

  6. Pour the mixture over the base, level the top with the back of a spoon. I find that by placing another sheet of non-bleached baking paper over the top stops the macadamia mixture from sticking to the spoon.

  7. Sprinkle the top with the beetroot powder and some desiccated coconut

  8. Cover the slice (or use the lid) and place in the freezer to set (or fridge).

  9. When set, remove from container, slice into small bite size potions - it's quite a rich slice so less is more!
